Swazi avocado slaw
- 2 tbsp lemon juice
- 1 tsp freshly grated ginger
- 1 tsp salt
- 2 large ripe avocados, cut into 1 cm dice
- 100 g peanuts, chopped
- Add the lemon juice, ginger and salt to a large serving bowl and mix well.
- Add the avocado and toss gently to mix thoroughly.
- Allow to marinate as room temperature for 20 minutes, sprinkle with the chopped peanuts and serve.
