Having a smoked turkey breast on hand during the holidays leads to sandwich perfection.
Ingredients[]
- Hickory wood chunks
- 1 tablespoon garlic powder
- 1 tablespoon pepper
- 2 teaspoons salt
- 1 (5-pound) bone-in turkey breast
- 1 fresh rosemary sprigs
Directions[]
- Soak wood chunks in water at least 1 hour.
- Combine garlic powder, pepper, and salt in a small bowl.
- Rub a small amount of spice blend under skin of turkey; rub the remainder on outside of bird.
- Place rosemary sprigs under skin.
- Prepare charcoal fire in smoker; let burn 15 to 20 minutes.
- Drain wood chunks, and place on hot coals.
- Place water pan in smoker; add water to depth of fill line.
- Place turkey in center of lower food rack; cover with smoker lid.
- Cook 5 to 6 hours or until a meat thermometer inserted into thickest portion registers 170°, adding additional water to depth of fill line, if necessary.
- Remove from smoker, and let stand 10 minutes before slicing.
Yield: 6 to 8 servings
