Having a smoked turkey breast on hand during the holidays leads to sandwich perfection.

  1. Soak wood chunks in water at least 1 hour.
  2. Combine garlic powder, pepper, and salt in a small bowl.
  3. Rub a small amount of spice blend under skin of turkey; rub the remainder on outside of bird.
  4. Place rosemary sprigs under skin.
  5. Prepare charcoal fire in smoker; let burn 15 to 20 minutes.
  6. Drain wood chunks, and place on hot coals.
  7. Place water pan in smoker; add water to depth of fill line.
  8. Place turkey in center of lower food rack; cover with smoker lid.
  9. Cook 5 to 6 hours or until a meat thermometer inserted into thickest portion registers 170°, adding additional water to depth of fill line, if necessary.
  10. Remove from smoker, and let stand 10 minutes before slicing.

Yield: 6 to 8 servings
