  1. Mix gelatin with cold water.
  2. Add boiling water, sugar, lemon juice and pineapple.
  3. Set in refrigerator to thicken (30 minutes).
  4. Fold in Cool Whip.
  5. Set aside.
  6. Crumble ½ cake in 13x9 inch pan (bite-size pieces)
  7. Spoon half of mixture over cake.
  8. Repeat with other half.
  9. Frost with Cool Whip.
  10. Sprinkle with coconut.
