  1. Heat oil and brown rice lightly in it.
  2. Add onion, tomato sauce and broth.
  3. Cover tightly and simmer for 30 minutes.
  4. During last 10 minutes of cooking, add chicken.
  5. Amount depends on your taste and how much you have on hand.
  6. Will freeze well.
