Be sure to squeeze as much liquid from the spinach as possible to avoid a watery dip.
Ingredients[]
- 1 (10-ounce) package frozen chopped spinach
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 1 cup (4 ounces) pre-shredded reduced-fat 4-cheese Mexican blend cheese
- 6 ounces (¾ cup) ⅓-less-fat cream cheese
- Cooking spray
- 120 baked tortilla chip scoops
Directions[]
- Preheat oven to 400°.
- Place frozen spinach in a colander; rinse with hot water until thawed.
- Drain, pressing until barely moist.
- Combine spinach, tomatoes, and cheeses in a large bowl.
- Spoon spinach mixture into an 11 x 7–inch baking dish coated with cooking spray.
- Bake at 400° for 23 minutes or until lightly browned and bubbly.
- Serve with tortilla chip scoops.
Yield: Serves 24 (serving size: 2 tablespoons dip and 5 scoops)
