  1. In a large skillet over low heat, melt butter or margarine; saute onion, green bell pepper and celery until vegetables are tender.
  2. Add rice, tomatoes, salt, and pepper; simmer 5 minutes.
  3. Remove Spanish rice from heat and stir in cheese.
