Speedy Almond Rice

1 T. oil 1/2 cup fine egg noodles 1/4 cup slivered almonds, optional 2 1/2 cups water 2 cups instant rice 1 t. salt

Heat oil in large skillet over medium low heat. Add noodles and almonds and cook until golden brown. Be careful, they brown quickly. Add remaining ingredients, increase the heat to medium high and bring to a boil, stirring occasionally. Cover and remove form heat. Allow to stand for 5 minutes or until all the liquid is absorbed. Fluff with a fork and serve. Serves 4 to 6 Source: Unknown
