A thick and warming soup with a gentle spicy heat and creamy chai flavour. This slow-cooked soup will store in an airtight container in the freezer for up to three months.
Ingredients[]
- 4 1/2 cups (1.1 l) prepared chicken broth
- 3 cups (750 ml) sliced carrot
- 1 cup (250 ml) chai tea concentrate
- 1 cup (250 ml) chopped onion
- 1/2 cup (125 ml) chopped celery
- 1/2 cup (125 ml) long-grain brown (or white) rice
- 1 garlic clove, minced (or 1/4 tsp, 1 ml, powder)
- 1/8 tsp (0.5 ml) dried crushed chilies
- 1/2 cup (125 ml) milk
Directions[]
- Combine first 8 ingredients in 3 1/2 to 4 quart (3.5 to 4 l) slow cooker.
- Cook, covered, on Low for 7 to 8 hours or on High for 3 1/2 to 4 hours.
- Carefully process with hand blender or in blender in batches until smooth.
- Add milk.
- Stir.
Makes about 8 cups (2 l)
