Apples and spice make everything nice in this exotic blend of brown rice and veggies.
Ingredients[]
- 1 1/3 cups (325 ml) water
- sprinkle of salt
- 2/3 cup (150 ml) long-grain brown rice
- 2 tsp. (10 ml) cooking oil
- 1 cup (250 ml) sliced leek (white part only)
- 3/4 cup (175 ml) chopped onion
- 3/4 cup (175 ml) thinly sliced carrot
- 1/2 cup (125 ml) chopped unpeeled tart apple (such as Granny Smith)
- 1 tsp. (5 ml) ground coriander
- 1 tsp. (5 ml) ground cumin
- 1/8 tsp. (0.5 ml) cayenne pepper
- 1/4 cup (60 ml) prepared chicken broth
Directions[]
- Combine water and salt in small saucepan.
- Bring to a boil.
- Add rice.
- Stir.
- Reduce heat to medium-low.
- Simmer, covered, for about 35 minutes, without stirring, until rice is tender.
- Remove from heat.
- Let stand, covered, for about 5 minutes until liquid is absorbed.
- Heat cooking oil in medium saucepan on medium.
- Add next 4 ingredients.
- Cook for about 5 minutes, stirring often, until onion is softened.
- Add next 3 ingredients.
- Stir.
- Add broth.
- Stir.
- Bring to a boil.
- Boil gently, covered, for about 4 minutes, stirring occasionally, until liquid is evaporated and carrot is tender.
- Add rice.
- Stir until heated through.
Makes about 2 3/4 cups (675 ml)
