Spicy Honey Chicken topped with Tomato Olivada

• Makes 4 servings of spicy honey chicken.

Ingredients

Tomato olivada

• 2 tbsp honey
• 1 tomato, diced
• ½ green bell pepper, chopped
• ½ red onion, chopped
• 12 kalamata olives, coarsely chopped
• 1 tbsp sherry wine vinegar
• 1 tbsp olive oil
• ⅛ tsp salt

Chicken

• 1 jalapeno chile, seeded and finely chopped
• 2 tbsp honey
• ¼ tsp salt
• 4 boneless skinless chicken breast halves
• 1 pound log polenta, sliced into 12 slices

Directions

Tomato olivada

1. In a bowl, stir all ingredients.
2. Set aside until serving.

Chicken

1. In a bowl, mix jalapeno, honey and salt.
2. Rub mixture over chicken, cover and refrigerate 1 hour.
3. Heat grill.
4. Grill chicken 12 minutes turning until done.
5. Grill polenta 4 minutes per side or until golden brown and heated through.
6. Top chicken breast halves with tomato olivada, serve each with 3 slices of polenta.
