Ingredients[]
- 3/4 Cup Yellow corn meal
- 1/2 Cup flour
- 1 1/2 Tsp baking powder
- 1/2 Tsp salt
- 1/8 Tsp red pepper (Cayenne)
- 1 Cup Shredded Monterrey jack cheese
- 1 4OZ Can Chopped Green Chilies, drained
- 1 Tbsp minced Onion
- 1 egg
- 1/2 Cup milk
- vegetable oil

Combine first 8 ingredients in a bowl. Make a well in the center of the mixture and add the egg and milk, stir until moistened. Pour oil to a depth of 3 inches in a Dutch oven and heat to 375°. Carefully drop batter by rounded tablespoons into hot oil. Fry a few at a time 3 to 4 minutes or until golden brown, turning once. Drain on paper towels! Serve immediately. Yields about 2 dozen.
