  1. 3/4 Cup Yellow corn meal
  2. 1/2 Cup flour
  3. 1 1/2 Tsp baking powder
  4. 1/2 Tsp salt
  5. 1/8 Tsp red pepper (Cayenne)
  6. 1 Cup Shredded Monterrey jack cheese
  7. 1 4OZ Can Chopped Green Chilies, drained
  8. 1 Tbsp minced Onion
  9. 1 egg
  10. 1/2 Cup milk
  11. vegetable oil

Directions Edit

Combine first 8 ingredients in a bowl. Make a well in the center of the mixture and add the egg and milk, stir until moistened. Pour oil to a depth of 3 inches in a Dutch oven and heat to 375°. Carefully drop batter by rounded tablespoons into hot oil. Fry a few at a time 3 to 4 minutes or until golden brown, turning once. Drain on paper towels! Serve immediately. Yields about 2 dozen.
