Ingredients[]
- 1 tablespoon olive oil
- 1 pound bay scallops
- 1 10-ounce package frozen green beans
- 1 red pepper, cut into strips
- 1 medium red onion, coarsely chopped
- ¼ teaspoon crushed red pepper
- ¼ teaspoon salt
- 3 cups cooked rice
- a scant ⅛ teaspoon powdered saffron
Directions[]
- Heat oil in large skillet over medium-high heat.
- Add scallops, green beans, red pepper, onion, crushed red pepper and salt.
- Cook 5 minutes or until scallops are tender.
- Add cooked rice and saffron; heat thoroughly.
