Kathy Moss's family challenged each other to bring some new dishes to the holiday feast one year, and this salad was her contribution. It was a big hit, as she recalls. "No one in the family had ever thought of spinach for the holiday meal!"
Ingredients[]
- 1 tablespoon butter or margarine
- 1 tablespoon light brown sugar
- 1/2 cup pecan halves
- 1 (7-ounce) package fresh baby spinach, washed
- 1 large Granny Smith apple, thinly sliced
- 1/2 cup crumbled blue cheese
- 3 tablespoons olive oil
- 2 tablespoons white vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
Directions[]
- Melt butter and sugar in a small skillet over low heat, stirring constantly.
- Add pecan halves; cook 2 to 3 minutes, turning to coat.
- Remove coated pecans from skillet, cool on wax paper.
- Toss spinach, apple, cheese, and pecans in a serving bowl.
- Whisk oil, vinegar, salt, and pepper; drizzle over salad, tossing gently to coat.
Yield: 4 servings
