Ingredients[]
- 3 cups spinach, cleaned
- ¼ cup sliced mushrooms
- ¼ cup pickled sliced beets
- 3 cloves caramelized garlic
- ¼ cup sliced red onion
- 1 orange, peeled and segmented
- ¼ cup orange juice
- 2 tbsp balsamic vinegar
- 1 tsp tabasco
- 1 tbsp honey
- pinch nutmeg
- pinch allspice
- fresh ground black pepper
Directions[]
- Mix the beets, garlic, red onion, orange segments, orange juice,balsamic vinegar, tabasco, honey, nutmeg, allspice and fresh ground black pepper.
- Marinate for one hour.
- Arrange the spinach and mushrooms on plates.
- Top with beets and marinade.
