- ½ cup butter, melted
- 10 oz pkg. frozen chopped spinach, thawed, squeezed dry
- 2 green onions, sliced
- 1 red bell pepper, diced
- 5½ oz cornbread mix
- 4 eggs, lightly beaten
- 1 cup cottage cheese
- 1¼ tsp seasoning salt
- Spray inside of crockpot with cooking spray.
- Combine all ingredients in a large bowl; pour into crockpot.
- Cover and cook on low for 3 – 4 hours or on high for 1¾ – 2 hours until knife inserted into the center comes out clean.
