Steep Estate Baked Potato Casserole

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Steep Estate in Elmo, Texas in 1989.

Ingredients

• 8 cooked peeled and diced potatoes
• 1 pound American cheese sliced in strips
• 1 cup mayonnaise
• ½ cup chopped white onion
• 1 teaspoon salt
• 2 teaspoons freshly ground black pepper
• ½ pound fried bacon drained and copped

Directions

1. Combine potatoes, cheese, mayonnaise and onion and place in casserole dish and top with bacon.
2. Bake at 325°F for 1 hour then season with salt and pepper.
