Steerman's Salad

2 large pieces of leaf lettuce 1 large beefsteak tomato, sliced 1 red onion, peeled, sliced 1 ripe avocado, sliced 1 T. tarragon vinegar 3 T. extra virgin olive oil 2 sprigs thyme, fresh Pinch each salt, pepper, garlic powder

Slice and shingle alternately tomato and onion. Sprinkle with a pinch of salt, pepper and garlic powder. Let stand, covered, in refrigerator for 1 hour. Peel and slice avocado. Place 1 leaf of lettuce each on 2 plates. Place half of tomatoes and half of onions on one side of each plate and half avocado on the other. Garnish with sprig of thyme and drizzle with tarragon vinegar and olive oil. Serves 2 Source: Steerman's Quarters, Disney Village Marketplace
