  1. Measure ¾ cup gelatin mixture into shallow pan.
  2. Chill until firm.
  3. Cool remaining gelatin until thick and syrupy.
  4. Combine rice and milk; cook over medium heat until thick and creamy.
  5. Mix sugar, unflavored gelatin, egg yolks, lemon peel and sherry in top of double boiler.
  6. Place over boiling water and whip continuously until mixture is thick and fluffy.
  7. Fold in rice; cool.
  8. Cut strawberry gelatin into cubes.
  9. Fold prepared whipped topping and cubed gelatin into rice mixture.
  10. Rinse 6-cup mold in cold water; spoon in rice mixture.
  11. Pour on remaining syrupy gelatin.
  12. Chill until firm, about 2 hours.
  13. Unmold onto serving plate.
  14. Garnish with fresh strawberries and mint leaves.
