Bake these little loaves in disposable pans from the grocery store or in baking molds. We tell you how in the Note at right
Ingredients[]
- 1/2 cup firmly packed light brown sugar
- 7 tablespoons uncooked regular oats
- 1/3 cup all-purpose flour
- 1/3 cup cold butter or margarine, cut into pieces
- 2 small ripe bananas, mashed (1 cup)
- 2 large eggs
- 1/2 cup sugar
- 1/3 cup butter or margarine
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup toasted pecans, toasted
- 1 teaspoon vanilla extract
Directions[]
- Combine first 3 ingredients.
- Cut in 1/3 cup butter with a pastry blender until crumbly; chill streusel.
- Beat banana and next 3 ingredients in a large mixing bowl at medium speed with an electric mixer 1 minute or just until smooth.
- Combine 1 1/2 cups flour and next 3 ingredients.
- Add to banana, beating just until dry ingredients are moistened.
- Stir in pecans and vanilla.
- Spoon batter into 3 (5 3/4" x 3 1/4") greased disposable mini loafpans.
- Sprinkle each loaf evenly with streusel.
- Bake at 350° for 35 minutes.
- Cool in pans on a wire rack 5 minutes; carefully remove from pans and cool on wire rack.
- Return loaves to pans for gift giving.
Yield: 3 mini loaves
