  1. In large bowl combine sauerkraut, carrots, celery, green pepper, onion, and pimento.
  2. In separate bowl combine sugar, vinegar, salt and pepper.
  3. Pour over vegetable mixture.
  4. Toss to mix.
  5. Refrigerate covered at least 4 hours before serving.
  6. Keeps up to a week.
