Sweet Spice Blend

2 T. light brown sugar 2 T. ground cinnamon 4 t. dried ground ginger 1 t. ground nutmeg 1/2 t. ground cloves 1/2 t. ground cardamom

combine all ingredients in a small bowl. Store in an airtight container. Makes 6 T. Note: A 2 oz. jar of cardamom will cost about $ can use cinnamon in it's place. Honey Spice Butter using above recipe: 1/2 cup butter, softened 2 T. honey 3/4 t. Sweet Spice blend Stir together all ingredients until mixture is smooth.

Spiced Glazed Carrots, using above recipe: 1 pound baby carrots 3 T. apricot preserves 1 T. butter 1 t. cider vinegar 1/4 t. salt 1/4 t. Sweet Spice Blend

Arrange carrots in steamer basket over boiling water. Cover and steam 7 to 9 minutes or until crisp tender. Remove from heat. Stir together 3 T. apricot preserves and next 4 ingredients in a medium skillet over medium heat until blended. Stir in carrots, and cook until thoroughly heated. Serve at once.
