Taco Beef Dip

1 lb. extra lean ground beef 1 pkg. taco seasoning mix 1 cup grated cheddar cheese 1/2 cup water 1/2 cup beer 6 T. tomato paste (1/2 of a 6 oz. can) Tortilla chips

Brown beef and break into bits. Drain off fat, add taco seasoning. Stir in water, beer and tomato paste. Simmer, covered, 10 minutes. Transfer mixture to onion soup bowls or ramekins. Add 1/2 of the grated cheese (1/2 cup) to each bowl. Bake in 325 oven for 5 to 10 minutes. Serve just warm. Use tortilla chips for dipping. Assist with spreading knife. This mixture freezes well.
