  1. Bring water to a boil.
  2. Place the tamarind pulp in a ovenproof mixing bowl and pour boiling water over it.
  3. Stir in sugar or honey.
  4. Cover and allow to stand several hours or overnight.
  5. Strain the tamarind water through a strainer or clean cloth.
  6. Add more sugar to taste.
  7. Refrigerate and serve over ice.
