I have used this same thing on chickens too as well Guinea hens. All came out well as did the quail I used it with.

  1. Mix wine, soy sauce, salt, honey and orange juice together.
  2. Rub 1 tbsp butter inside each hen.
  3. Sprinkle the cavity with salt.
  4. Mix the onion, garlic, pecans, mushrooms, and tangerines together.
  5. Stuff each hen with this mixture.
  6. Heat the liquid mixture until it begins to boil.
  7. Turn off and let cool for 5 minutes.
  8. Pour 2 tbsp of this into each hen.
  9. Preheat oven to 325°F then bake hens for 45 minutes.
  10. Be sure to baste every 10 minutes with the liquid mixture.
  11. Test birds. If not done. Cook until done.
