  1. In a small pot add 6 cups water and bring to a boil. Add tapioca and stir well. Bring to a boil and simmer 8 minutes, stirring occasionally . Let it sit until ready to use, at least 10 minutes. Strain, rinse, and drain well.
  2. In the same pot add coconut milk, Sugar, and salt. Bring to a boil on high heat. Add tapioca, stir well, and return to a boil. Turn off the heat and let it sit 30 minutes before serving.
  3. Serve at room temperature or cold.
