Teatimes Thumbprint Cookies

Ingredients: 1 cup butter, room temperature (2 sticks) 1 cup sugar 1 egg 1 teaspoon almond extract 2 cups all purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt

Preheat oven to 350 degrees F, Line baking sheets with parchment paper. Cream butter till light in color, add sugar and continue creaming, then add the almond extract and egg. In a separate bowl combine flour, baking powder and salt. Mix the dry ingredients into the creamed mixture. Spoon the dough onto parchment paper, leaving about 2 inches between dough. Press thumb into center, but not all the way through, fill the thumbprint with jam or jelly. (I even just pressed maraschino cherries into the center.) Bake for 15 to 17 minutes, till the edges are light brown. Cool completely on the baking sheet. Number Of Servings:2 to 3 dozen cookies.
