Ingredients[]
- 4 Chicken Breasts, Cubed
- 2 Cups water
- 1 (14 1/2 oz) Can beef broth
- 1 (14 1/2 oz) Can chicken broth
- 1 (14 1/2 oz) Can Diced tomatoes
- 1/2 Cup Chopped Onion
- 1/4 Cup Chopped green peppers
- 1 Large carrot, diced
- 1 tsp cumin
- 1/2 tsp black pepper
- 1 tsp chili powder
- 1 tbsp cilantro
- Tortilla Chips
- Monterey jack Cheese
- sour cream
Directions[]
Combine all ingredients (except tortilla chips, Cheese and sour cream) and bring to a boil.
Simmer until Chicken is cooked and tender (approx 1 hour).
Serve with tortilla chips, topped with Monterey jack Cheese and a tsp of sour cream (if desired).
