This can also be tossed in a bowl and served as a mixed salad.

  1. Soak noodles in a bowl of warm water to cover 10 minutes.
  2. Arrange next 6 ingredients and ¾ cup mint leaves on plates, leaving space in center for noodles.
  3. Put noodles in a colander under running warm water.
  4. Break apart with fingers until softened.
  5. Drain, toss with ¼ cup peanut sauce and rest of mint.
  6. Add to plates and serve with rest of sauce.
