Three Rivers Rice

1 huge onion, minced 1/4 pound butter 2 cups rice 1/2 pound sharp cheese, grated 2 cans (10.5 oz. each) beef consomm� 1 can small mushrooms, with liquid (8 oz) 1 cup slivered almonds, toasted Saute onion in butter; add uncooked rice and simmer 5 minutes. Add remaining ingredients, reserving almonds; pour into a 2 1/2 quart casserole. Cover and bake 1 hour at 325. Stir in almonds before serving. Can be prepared ahead.
