Always check the ingredients to make sure the product is vegan.
- 1/2 cup white rice
- 4 cups soy milk
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- Dash of nutmeg
- 1/4 cup Sugar
- Preheat oven to 275
- Mix all ingredients in a bowl and place in a 1 1/2 quart lightly oiled overproof dish.
- Bake covered for 3 hours, or until the pudding sets.
