  1. Preheat oven to 350°.
  2. Spread cashews in a shallow pan.
  3. Bake at 350° for 7 minutes, stirring occasionally.
  4. Drop garlic through food chute with food processor on; process until minced.
  5. Add cashews, ¾ cup water, and next 6 ingredients (through chickpeas); process until smooth.
  6. Garnish with cilantro, if desired.
  7. Serve with cucumbers.

Yield: Serves 20 (serving size: 2 tablespoons hummus and 4 cucumber slices)
