Toasting the roasted cashews deepens their flavor.
Ingredients[]
- 1 cup jumbo cashews, roasted in sea salt
- 2 garlic cloves
- ¾ cup water
- ¼ cup tahini (roasted sesame seed paste)
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- ¼ teaspoon salt
- 1 (15.5-ounce) can chickpeas (garbanzo beans), rinsed and drained
- 2 teaspoons chopped fresh cilantro (optional)
- 2 large cucumbers, cut into thin slices
Directions[]
- Preheat oven to 350°.
- Spread cashews in a shallow pan.
- Bake at 350° for 7 minutes, stirring occasionally.
- Drop garlic through food chute with food processor on; process until minced.
- Add cashews, ¾ cup water, and next 6 ingredients (through chickpeas); process until smooth.
- Garnish with cilantro, if desired.
- Serve with cucumbers.
Yield: Serves 20 (serving size: 2 tablespoons hummus and 4 cucumber slices)
