Rum, bourbon, and coconut milk lend tropical flair to time-honored eggnog. This recipes doubles easily for a party.
Ingredients[]
- 4 egg yolks
- 2 (13.5-ounce) cans coconut milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/3 cup Malibu rum
- 1/3 cup bourbon
- 1 cup whipping cream
- Ground nutmeg
- Toasted sweetened flaked coconut
Directions[]
- Whisk together first 3 ingredients in a heavy saucepan.
- Cook over medium heat, stirring often, 5 to 6 minutes or to 160°.
- Remove from heat, and stir in flavorings.
- Place plastic wrap directly over surface, and chill at least 4 hours.
- Stir in rum and bourbon.
- Beat whipping cream at medium speed with an electric mixer until soft peaks form; fold into nog
- Sprinkle each serving with nutmeg and, if desired, toasted coconut.
Yield: about 7 cups
