Swiss cheese and blue cheese comprise the dynamic duo atop crisp Melba crackers. Bits of garlic, dried tomatoes, toasted pecans, and green onion kick up the flavor.
Ingredients[]
- 48 plain Melba toast rounds
- 1 garlic clove, halved
- 20 dried tomato halves in oil, drained and finely chopped
- 2 garlic cloves, minced
- 1 cup (4 ounces) shredded Swiss cheese
- 1 cup crumbled blue cheese
- 1/2 cup chopped pecans, toasted
- 1/4 teaspoon freshly ground pepper
- 4 green onions, thinly sliced
Directions[]
- Place crackers in a single layer on a parchment paper-lined baking sheet.
- Rub cut sides of halved garlic clove over tops of crackers.
- Combine tomatoes and next 5 ingredients in a bowl, stirring until blended.
- Gently stir in green onions.
- Let stand 15 minutes for cheese to soften and to allow flavors to blend.
- Spread 1 heaping teaspoon cheese evenly over each cracker.
- Bake at 400° for 5 to 7 minutes or until cheese is melted and bubbly.
- Serve hot.
