  1. Heat oil in a non-stick pan and add curry leaves and mustard seeds.
  2. When they start to sizzle, add sliced onions.
  3. Cook till onions turn transparent and add chopped tomatoes. Cook for a few minutes till tomatoes begin to pulp.
  4. Add salt, turmeric and chili powder and allow spices to blend in.
  5. Add in cooked rice and stir-fry till mixes in with all spices.
  6. Garnish with chopped coriander leaves and serve warm.
