You have to like tomatoes, but this is a good way to use up summer garden vegetables.

  1. Layer chopped tomatoes (fairly thick layer)
  2. Layer chopped bell peppers (thin to medium thick layer)
  3. Layer sweet pickles or relish (thin or medium thick)
  4. Top with a layer of mayonnaise
  5. finally add a layer of finely crushed Ritz crackers.
  6. Cover and leave in refrigerator overnight.
