Ingredients[]
- 1 quart of tomatoes or one 3-lb can.
- 3 bell peppers
- 4 onions
- 2 tsp salt
- 1/2 tsp black pepper
- 2 cups stale breadcrumbs
- 6 tablespoons butter, lard or Wesson Snowdrift oil.
- 3 tablespoons Sugar (optional).
Directions[]
- Peel and slice tomatoes.
- Remove seeds, and cut the bell peppers in small pieces.
- Boil the onions until tender.
- Add the tomatoes, peppers, and optional sugar to the onions, and simmer for 1 hour.
- Season with salt and pepper
- Cool and keep on ice for several hours.
- Mosten breadcrumbs with butter or oil.
- Fill a baking dish with alternate layers of tomatoes and breadcrumbs, ending with breadcrumbs.
- Bake in a slow oven for 1 hour.
