  1. In a two quart saucepan, heat olive oil over medium until hot.
  2. Add chopped onion and saute until clear.
  3. Add garlic and chopped Anaheim chile.
  4. Add tortilla strips, coated in oil, and saute until crispy.
  5. Add tomato paste, peeled tomatoes, stock and chopped cilantro.
  6. Simmer for 15 minutes, purée and season to taste.
  7. Garnish and serve hot.
