Trinidadian Banana Fritters

Ingredients

• ½ lb all purpose flour
• 2 tsp baking powder
• 2 cups oil for frying
• ½ tsp angostura bitters
• 1 lb bananas, well beaten
• pinch of salt
• pinch or two grated nutmeg
• ½ lb sugar

Directions

1. Sift all dry ingredients together.
2. Add well-beaten bananas.
3. Add sugar and bitters and beat again.
4. Heat oil in a heavy pot.
5. Drop banana batter into the hot oil by the spoonful and fry until golden brown.
6. Drain on kitchen paper towels.
