  1. Cook apple, celery, onion and raisins in butter in large skillet until tender crisp.
  2. Stir in rice, curry powder, salt and pepper; heat thoroughly.
  3. Transfer to serving platter.
  4. Arrange tuna on top of rice mixture.
  5. Blend mayonnaise and lemon juice in small bowl; spoon over tuna.
  6. Garnish with tomatoes and parsley, if desired.
