Resort properties in Sri Lanka offer dishes that feature a traditional Sri Lankan fare with a modern twist. Here is a recipe for one of such dishes.

Corn rice

Ingredients[]

Corn Rice
Tuna Ambulthiyal Rotti
Karan koku white curry
Baby jackfruit & jack seed, onion, tomato, curry leaf sambol


Directions[]

Corn Rice
  1. Heat the vegetable oil in a thick-bottom pan
  2. Add onion and garlic, and cook until soft
  3. Add washed rice and water; cook well
  4. When rice is almost cooked, add coconut milk and corn
Tuna Ambulthiyal Rotti
  1. Boil warm water with pieces of goraka
  2. Grind softened goraka into a paste
  3. Mix in remaining spices
  4. Rub paste onto the fish and leave overnight to marinate
  5. Combine flour, grated coconut and salt in a small bowl. Add water, a little at a time, to create a soft dough
  6. Roll out dough using a rolling pin
  7. Wrap dough around fish, and cook on a grill
Karankoku white curry
  1. Combine the spices, onion and garlic.
  2. Add a little water and simmer for half an hour
  3. Add coconut milk and bring to a boil
  4. Add karan koku and cook until tender
Baby jackfruit & jack seed, onion, tomato, curry leaf sambol
  1. Mix all ingredients
  2. Season with salt, pepper, and limed juice
