  1. Sauté the onion, carrots and celery in butter until soft
  2. Blend in flour
  3. Gradually stir in broth, then half-and-half
  4. Cook, stirring constantly until the mixture thickens
  5. Stir in salt, pepper, cheese and turkey
  6. Heat until the cheese just melts
