Here's what to do with that last bit of turkey leftover from the big feast. Top this turkey hash with poached eggs for a quick brunch idea.

  1. Combine first 4 ingredients.
  2. Heat oil in a large nonstick skillet over medium-high heat until hot.
  3. Add potatoes and onion.
  4. Sauté 8 to 10 minutes.
  5. Add turkey, and cook 5 minutes or until potatoes are tender.
  6. Stir in milk.
  7. Cover and simmer 1 to 2 minutes.
  8. Remove from heat.
  9. Sprinkle with parsley and pepper.
  10. Serve with buttered grits or toast.

Yield: 2 to 3 servings
