Here's what to do with that last bit of turkey leftover from the big feast. Top this turkey hash with poached eggs for a quick brunch idea.
Ingredients[]
- 1 1/2 cups cubed unpeeled red potato
- 1 cup chopped onion
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 2 tablespoons vegetable oil
- 2 cups cubed cooked turkey
- 1/2 cup milk
- 2 tablespoons chopped fresh parsley
- Freshly ground pepper
Directions[]
- Combine first 4 ingredients.
- Heat oil in a large nonstick skillet over medium-high heat until hot.
- Add potatoes and onion.
- Sauté 8 to 10 minutes.
- Add turkey, and cook 5 minutes or until potatoes are tender.
- Stir in milk.
- Cover and simmer 1 to 2 minutes.
- Remove from heat.
- Sprinkle with parsley and pepper.
- Serve with buttered grits or toast.
Yield: 2 to 3 servings
