TURKEY AND VEGETABLE CHILI

3 tbs olive oil 2 onions, chopped 1 green bell pepper, diced 3 cloves garlic, chopped 2 pounds cooked turkey breast, in cubes 3 tbs chili powder 2 tsp ground cumin 2 chipotles in adobo, seeded and chopped 1 tbs adobo sauce 2 cups chicken broth 1 1/2 tsp salt 2 cans cannellini beans, drained 1 can pinto beans, drained 10 oz box frozen corn kernels

Heat oil in pot. Add onion, pepper, cook 6 min. Add garlic and turkey, cook 5 min. Add chili powder, cumin, chipotles, and adobo sauce, cook 1 min. Add broth and salt. Cover, simmer 15 min. Mash 1 can cannellini beans. Add all the beans and corn to pot. Simmer, uncovered, 10 min. Let stand 10 min. SERVE OVER CORN CHIPS AND GARNISH WITH LIME WEDGES AND CILANTRO. Makes 6 servings.*
