  • 12 medium-size muffins
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup shortening, melted


1.Preheat oven to 400° F (hot).

2.Grease muffin tins.

3.Mix flour, baking powder, sugar, and salt thoroughly.

4.Mix egg and milk; add fat. Add to flour mixture. 5.Stir until dry ingredients are barely moistened. Do not overmix. Batter will be lumpy.

5.Fill muffin tins half full of batter.

6.Bake 20 to 25 minutes or until lightly browned.

Calories per muffin: About 150.
