Best Choice Catfish
Dredge thawed fish in seasoned Best Choice corn meal. Fry in hot vegetable oil (375’f) for 4 minutes or until internal temperature reaches 160’f.
Brown Gravy Mix
Empty 1 pkg. brown gravy mix into a small saucepan. Stir in 1 cup water. Bring to a boil, stirring constantly. Reduce heat and simmer 1 minute. Makes 4 (¼ cup) servings. Serve prepared gravy over noodles, mashed potatoes, rice, steaks, meatloaf, meatballs, pork and hot meat sandwiches.
Cheesy Garlic Bread
Cut 1 loaf Italian bread in half horizontally. Mix ½ cup melted butter and 2 tsp. roasted garlic. Brush on bread. Top with ½ cup each shredded mozzarella and cheddar cheese. Bake in preheated 350’f oven for 15 or 20 minutes or until cheese is melted.
Chili Con Carne
Crumble and brown 2 lb. ground beef in large skillet. Drain fat if desired. Stir in 1 can (8 oz.) tomato sauce and 1 cup (8 oz.) water or 1 can (14.5 oz.) diced tomatoes. Add 1 can (15 oz.) red kidney or pinto beans. Blend in chili seasoning. Salt if desired. Simmer 10 minutes or longer.
Chocolate Wavy Chips
Place a sprinkle of rich chocolate chips onto a handful of Lays wavy chips and microwave for 20 seconds. Easy!
Cilantro Chicken Lime
Mix ⅓ cup oil, ¼ cup lime juice, 1 tsp. Each garlic powder and cilantro leaves, and ¼ tsp. Ground cumin, ground red pepper and seasoned salt. Add 1 ½ Lbs. boneless skinless chicken breasts; coat well. Refrigerate 30 minutes. Grill 10 minutes or until cooked through.
Drain 1 can (15 oz.) chickpeas, reserving ¼ cup liquid. Place chickpeas in food processor with 1 clove garlic, 1 tbsp. lemon juice, 1 tsp. ground cumin and ¼ tsp. each ground red pepper and salt; cover. Process until smooth, adding reserved liquid until desired consistency. Serve with pita chips.
