Tripe soup

  1. Cut tripe in fine strips.
  2. Melt fat in pan and add chopped onions, minced garlic.
  3. Cook a few minutes.
  4. Add flour and brown lightly.
  5. Add water or soup stock.
  6. When this comes to a boil, add tripe, seasoning and lemon rind and add parsley.
  7. Simmer for 10 minutes.
