Tripe soup

- Cut tripe in fine strips.
- Melt fat in pan and add chopped onions, minced garlic.
- Cook a few minutes.
- Add flour and brown lightly.
- Add water or soup stock.
- When this comes to a boil, add tripe, seasoning and lemon rind and add parsley.
- Simmer for 10 minutes.
