Whenever the urge to bake cookies strikes, soften cold butter quickly by heating it in the microwave for about 30 seconds at MEDIUM-LOW.
Ingredients[]
- 3/4 cup sugar
- 1/3 cup butter, softened
- 1 tablespoon light-colored corn syrup
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Cooking spray
Directions[]
- Preheat oven to 375°.
- Combine sugar and butter in a large bowl, and beat with a mixer at medium speed until light and fluffy.
- Add corn syrup, extracts, and egg; beat well.
- Lightly spoon flour into dry measuring cups, and level with a knife.
- Combine flour, baking powder, and salt.
- Add flour mixture, to sugar mixture, and beat at low speed until well blended.
- Drop dough by level tablespoons 2 inches apart onto baking sheets coated with cooking spray.
- Flatten cookies with a fork in a crisscross pattern.
- Bake at 375° for 8 minutes or until cookies are golden brown.
- Remove cookies from pan and cool completely on wire racks.
Yield: 3 dozen cookies (serving size: 1 cookie)
