Whenever the urge to bake cookies strikes, soften cold butter quickly by heating it in the microwave for about 30 seconds at MEDIUM-LOW.

  1. Preheat oven to 375°.
  2. Combine sugar and butter in a large bowl, and beat with a mixer at medium speed until light and fluffy.
  3. Add corn syrup, extracts, and egg; beat well.
  4. Lightly spoon flour into dry measuring cups, and level with a knife.
  5. Combine flour, baking powder, and salt.
  6. Add flour mixture, to sugar mixture, and beat at low speed until well blended.
  7. Drop dough by level tablespoons 2 inches apart onto baking sheets coated with cooking spray.
  8. Flatten cookies with a fork in a crisscross pattern.
  9. Bake at 375° for 8 minutes or until cookies are golden brown.
  10. Remove cookies from pan and cool completely on wire racks.

Yield: 3 dozen cookies (serving size: 1 cookie)
