Vanilla Bean Pancakes

Shapely pancake molds and vanilla bean batter make this recipe and gift idea novel.

Ingredients

• 2 cups all-purpose flour
• 1/4 cup sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1 vanilla bean
• 2 cups milk
• 2 tablespoons vegetable oil
• 1 large egg, lightly beaten

Directions

1. For gift giving, combine first 4 ingredients in a jar or zip-top plastic bag.
2. Seal jar or bag.
3. Attach vanilla bean to a gift.
4. Include directions in a gift card.
5. To prepare pancakes, place dry ingredients in a large bowl, and make well in center.
6. Split vanilla bean and scrape seeds into a small bowl.
7. Whisk in milk, oil, and egg until blended.
8. Place pancake molds on a hot, lightly greased griddle.
9. Spray molds with cooking spray.
10. Pour 1/4 cup into each mold, spreading batter evenly to edges.
11. Cook until tops are covered with bubbles and pancakes pull away from sides of molds; remove pancake molds.
12. Turn pancakes and cook other side.
13. Repeat process with remaining batter.

Yield: 12 (4") pancakes
