Vegetable curry

  1. Heat ghee in a large pot.
  2. Add cumin, coriander, ginger, garlic and onion and stir-fry for 1 minute.
  3. Add turmeric, garam masala, chili powder, minced red chile and bay leaves.
  4. Mix well and stir-fry for another minute.
  5. Add vegetables, potatoes and tomatoes.
  6. Mix well and cook for another 5 minutes.
  7. Add water and bring to a boil.
  8. Add remaining ingredients.
  9. Serve hot over boiled rice.
